Welcome to Treat to Eat! It has been a while since I have shared a recipe, but here is a great easter recipe. It is a delicious almond macaroon (note it is not the french one) with little candy eggs on it to make it look like a nest. I love these cookies because they are buttery and just taste soooo good.

Here it is:

Ingredients:

  • 2 cups of all-purpose flour
  • 1 tbsp of baking powder
  • ¼ tsp of salt
  • ¾ cup of butter(room temperature)
  • 1, 8 ounce package of cream cheese(room temperature)
  • 1 cup of white sugar
  • ¾ tsp of vanilla extract
  • 2 cups of flaked coconut
  • 1 cup of small candy eggs

 

Steps:

  1. Preheat your oven to 325 degrees. Then Grease cookie sheets
  2. Sift flour, salt, and baking powder in a bowl ad set aside. In a medium bowl, cream together butter, cream cheese and .Add in vanilla, then gradually add in the dry ingredients.
  3. Roll the cookies into walnut sized balls, then roll the cookies into the coconut. On the cookie sheet place the cookies 2 inches apart. Then press 1 candy egg into the cookie.
  4. Bake in oven for 12 min, then remove from oven and press 2 egg candies into the center of each cookie. Return to oven and bake for another 4 to 5 min, until golden brown. Cool cookies on baking sheet for a couple minutes before removing to a wire rack to cool completely.
  5. Enjoy your yummy easter treats!
